    Hi there, I am a bartender using molecular techniques from Thailand. I am wondering if any of have you seen the edible Helium balloon Alinea makes? I would like to create something similar but with my own twist to it but simply trying to figure out how its done I’ve found absolutely nothing on the internet. I have a few ingredients I’ve listed I feel could potentially be used to make it (Isomalt, glycerin, Sosa brand’s elastic gelatin, kuzu root, citric acid) but nothing solid yet. Anyone have any ideas on how its done? Or at least point me in the right direction? Any help would be much appreciated.
