If you’re visiting this forum, you’re probably familiar with Modernist Cuisine, Cooking for Geeks, and the Alinea Cookbook. But what other cookbooks out there contain useful sciencey information useful for the home cook?

While the big names like Modernist Cuisine are fantastic, for me the hidden gems of molecular gastronomy cookbooks are the ones that translate the science into practical dishes for the home kitchen. I’m looking for recipes that use surprising but research paper writers achievable techniques, not a $500 kitchen appliance! It would be great to find a book that dives into the “why” behind the science, but keeps the “how” approachable for an enthusiastic home cook.
