    Will there be any trouble with basic spherification if I use a mix of Red Grape, Pomegranate, Tart Cherry, Mango. Rose Hip, Purple Carrot, and Blueberry juice?

    It will probably be a little too acidic but just measure the pH and add sodium citrate if necessary.
