Spherification for a large group…

Hi! I am taking part in a “Science of Cocktails” event and am looking for a recipe that I can make for a large group (200 or so people). Any ideas of something I could potentially make ahead of time– preferably a small, 1oz cocktail of some sort? Any input would be greatly appreciated.

Frozen spherification is doable but will definitely be some work.

Very easy is to add foam or bubbles to almost any cocktail
